Preparation
1 Heat the olive oil in a small pan over amedium-high heat. Add the choppedcarrots and cook for 3-4 minutes.
2 Add the mince, chopped tomatoes andwater and bring to a boil. Cover andsimmer gently for 18-20 minutes.
3 Remove from the heat and purée toa coarse consistency using a stickblender.
