Preparation
Makes 1
10 fresh mint leaves
½ medium lime, cut into 3 wedges
2 tbsp caster sugar
Large handful of ice
50ml white rum
100ml soda water
Place mint leaves and 1 lime wedge into a sturdy glass along with the sugar. Use a muddler and crush.
Add remaining lime wedges and do not strain the mixture.
Fill the glass almost to the top with ice and add the rum.
Top the glass up with soda water and stir before serving.
