Method
Ingredients:
- 100g rocket
- 100g baby tomatoes, sliced in half
- 1 small red onion, thinly sliced
- ½ cucumber, thinly sliced
- 1 avocado, cut into wedges
- Coriander leaves, to garnish
- 2 tbsp mixed seeds, to garnish
For the dressing:
- 1 tbsp olive oil
- Juice of 1 lime
- 1 avocado
- 1 garlic clove, roughly chopped
- ½ green chilli, roughly chopped
- Handful of coriander leaves
- Salt and pepper, to taste
For the salmon:
- 1 tbsp olive oil
- 4 salmon darnes
- ½ tsp chilli powder
- ½ tsp garlic granules
Directions:
- Blend all the dressing ingredients together in a small food processor until smooth. Season to taste and set aside.
- Rub the salmon with the oil and sprinkle evenly with the chilli powder, garlic granules, salt and pepper.
- Heat a non-stick frying pan over medium heat and cook the salmon for 3 minutes on each side until just cooked through.
- In a large bowl, toss the rocket, cucumber, onion, and tomatoes together with a couple of tablespoons of the dressing.
- Serve the dressed salad in shallow bowls and top with the salmon, coriander leaves and mixed seeds.
