Healthy Salmon Salad

Preparation

    Ingredients:

    100g rocket

    100g baby tomatoes, sliced in half

    1 small red onion, thinly sliced

    ½ cucumber, thinly sliced

    1 avocado, cut into wedges

    Coriander leaves, to garnish

    2 tbsp mixed seeds, to garnish

    For the dressing:

    1 tbsp olive oil

    Juice of 1 lime

    1 avocado

    1 garlic clove, roughly chopped

    ½ green chilli, roughly chopped

    Handful of coriander leaves

    Salt and pepper, to taste

    For the salmon:

    1 tbsp olive oil

    4 salmon darnes

    ½ tsp chilli powder

    ½ tsp garlic granules

    Directions:

    Blend all the dressing ingredients together in a small food processor until smooth. Season to taste and set aside.

    Rub the salmon with the oil and sprinkle evenly with the chilli powder, garlic granules, salt and pepper.

    Heat a non-stick frying pan over medium heat and cook the salmon for 3 minutes on each side until just cooked through.

    In a large bowl, toss the rocket, cucumber, onion, and tomatoes together with a couple of tablespoons of the dressing.

    Serve the dressed salad in shallow bowls and top with the salmon, coriander leaves and mixed seeds.
