Method

Ingredients:

  • 100g rocket
  • 100g baby tomatoes, sliced in half
  • 1 small red onion, thinly sliced
  • ½ cucumber, thinly sliced
  • 1 avocado, cut into wedges
  • Coriander leaves, to garnish
  • 2 tbsp mixed seeds, to garnish

For the dressing:

  • 1 tbsp olive oil
  • Juice of 1 lime
  • 1 avocado
  • 1 garlic clove, roughly chopped
  • ½ green chilli, roughly chopped
  • Handful of coriander leaves
  • Salt and pepper, to taste

For the salmon:

  • 1 tbsp olive oil
  • 4 salmon darnes
  • ½ tsp chilli powder
  • ½ tsp garlic granules

Directions:

  • Blend all the dressing ingredients together in a small food processor until smooth. Season to taste and set aside.
  • Rub the salmon with the oil and sprinkle evenly with the chilli powder, garlic granules, salt and pepper.
  • Heat a non-stick frying pan over medium heat and cook the salmon for 3 minutes on each side until just cooked through.
  • In a large bowl, toss the rocket, cucumber, onion, and tomatoes together with a couple of tablespoons of the dressing.
  • Serve the dressed salad in shallow bowls and top with the salmon, coriander leaves and mixed seeds.
