Preparation
- Mix together all the salsa ingredients in a bowl and place into the fridge while you cook the pork.
- Mix together the honey, cayenne pepper and garlic in a microwave safe jug. Microwave on high for 30 - 45 seconds; until syrupy.
- Heat a pan over a medium to high heat.
- Drizzle or spoon the olive oil over the pork chops.
- Cook the pork chops for 5 minutes on each side.
- Spoon over some of the honey mixture and cook for a further 2 -3 minutes per side; until cooked through. Spoon some more honey on the alternate side once you’ve cooked the first honey side down.
- Allow pork to rest on a plate for a few minutes; cover with foil.
- Serve pork chops with peach salsa, some fresh rocket and some roast or boiled baby potatoes if you want some a little extra on the side.
- Drizzle some of the honey over the top before digging in.
