Method
Ingredients:
175g lentils, 40g breadcrumbs (1 slice of bread) 1 small onion, 200g of lean mince beef, 1 tbsp. dried mixed herbs,1 egg, ½-1 tbsp mustard, 7 potatoes, burger buns.
Directions:
1.Cut the potatoes into thick cut chips, drizzle chips with a teaspoon of olive oil (if desired), bake in oven for 20 minutes.
2.Bring lentils to a boil, cover tightly, reduce heat and simmer until they are tender (about 5-7 minutes). Be sure to season with salt after cooking - if salt is added before, the lentils will become tough.
3.Put bread into a food processor; to make crumbs. Empty into a large bowl. Add onion to processor until finely chopped. Add lentils, beef, dried herbs and plenty of seasoning to food processor until well combined (but retaining texture).
4.Scrape beef mixture into breadcrumb bowl; mix through egg and mustard (with hands). Shape into four equal patties.
5.Heat oil in a large non-stick frying pan; fry burgers for 15min, turning midway, or until golden on both sides and cooked through.
6.Serve burgers with toasted burger buns and homemade chips
