    Method

  1. Add the shallot to a medium to hot pan.
  2. Add the lobster shells.
  3. Cook for 5 mins or until the shallot is soft and translucent.
  4. Turn the heat down to medium and add the garlic. Cook for 3 mins.
  5. Deglaze the pan with the prosecco and cook until it’s reduced by half.
  6. Add the cream and cook for a few minutes allowing the cream to thicken.
  7. Season with salt & pepper.
  8. Pass through a sieve and serve.
