Penne Pasta with Red Onions and Goat's Cheese

Preparation

  1. Peel and dice onions, fry with salt and pepper. Cook the pasta in salted water.
  2. Sprinkle onions with sugar, leave to caramelise for 1 min. Add balsamic vinegar and red wine and leave to simmer for 3 minutes, add in water from the pasta and stir in goat's cheese.
  3. Wash and finely chop chives.Chop walnuts and dry fry, add pasta to sauce.
  4. Sprinkle pasta with walnuts and chopped chives.
