Preparation
- Heat a griddle pan over a medium to high heat. Grease your pan with olive oil.
- Add the steaks to the pan. Cook on each side for 8 - 10 minutes.
- Meanwhile, mix together the cucumber and red onion in a bowl.
- Finely chop ½ of the pack of coriander. Add the coriander to the red onion and cucumber.
- Zest the lime and set to one side.
- Add the juice of the lime to the cucumber salsa.
- Add the lime zest to the sour cream. Season with salt.
- You can heat your tortillas in a pan or microwave if desired.
- Once the grilling steak is cooked, place it on a board for a couple of minutes before slicing.
- To serve, add a dollop of the sour cream to a tortilla, add a few slices of the grilling steak. Top with cucumber salsa, some of the renaming fresh coriander and some hot sauce or sriracha if desired.
