Preparation
- Boil your potatoes, strain and crush lightly with a potato masher or fork.
- Mix with the spring onions sour cream, salt and pepper.
- Meanwhile bring a medium pot of salted water to a simmer, drop in your salmon and remove the pot from the heat, as the water cools the fish cooks,when cool, peel the skin off the salmon and the fish is then ready to serve on the potato salad with the sliced tomato.
I love poached salmon, it always reminds me of summer.This simple salad is a classic combination of flavours that everyone will enjoy.I like to serve this with some tomatoes for freshness.
