Spaghetti and Green Asparagus in Lemon Sauce

Preparation

  1. Wash asparagus, peel, chop and remove ends. Cut into chunky pieces (5 cm). Cut onion into rings, cut avocados into chucks. Mix with lemon juice.
  2. Cook pasta in salted water, drain and add in asparagus chunks for 2 to 3 minutes. fry onion rings in butter, add 1 tablespoon of spaghetti water and stir in grated cheese. Season with lemon juice, salt, pepper and sugar. If sauce is too thick, add a little spaghetti water.
  3. Put pine nuts into the over to cook for 2 minutes.
  4. Add spaghetti to lemon sauce, scatter avocado and pine nuts on top.
