Preparation
- Wash asparagus, peel, chop and remove ends. Cut into chunky pieces (5 cm). Cut onion into rings, cut avocados into chucks. Mix with lemon juice.
- Cook pasta in salted water, drain and add in asparagus chunks for 2 to 3 minutes. fry onion rings in butter, add 1 tablespoon of spaghetti water and stir in grated cheese. Season with lemon juice, salt, pepper and sugar. If sauce is too thick, add a little spaghetti water.
- Put pine nuts into the over to cook for 2 minutes.
- Add spaghetti to lemon sauce, scatter avocado and pine nuts on top.
