Ingredients

(2 Steaks)
360 g g Green Bean Green Bean
(Topped and Tailed)
168 g g Red Onions Red Onion
(Thinly Sliced)
2 tsp tsp English Mustard English Mustard
150 ml ml Cream Cream
(Lightly Whipped)
12 g g Garlic Garlic
(2 Cloves)
4 Eggs Egg
(Lightly boiled and peeled)
20 g g Onions Onion
(Fried until crispy)
Sunflower Oil Sunflower Oil
(For Cooking Steaks )
Salt Salt

Steak Salad with French Beans, Red Onions and Mustard Dressing

Method

  1. Bring a large pot of salted water to the boil and cook the beans vigorously for 3 minutes then refresh in iced water to keep their colour.
  2. Season your steaks then heat the oil in a pan until gently smoking.
  3. Cook your steaks for 4 minutes on each side, this is for a nice pink finish, then allow to rest for a little while in a warm oven.
  4. Meanwhile put the sliced onions into a sieve then pour a 1/2 kettle of boiling water over them, this will soften them just enough.
  5. Add your mustard , garlic, salt and pepper to the cream, drain the French beans really well, then mix the mustard cream together with the onions and beans.
  6. Transfer to a platter and slice the steak thinly on top.
