Stewed Amaranth with Banana and Berries
- Boil the milk. Add the amaranth and vanilla sugar, cover the saucepan and simmer over a moderate heat for 35-40 min, allow to cool.
- Separate eggs, whip egg whites until stiff. Stir melted butter, sugar and salt until creamy. Add yolks and amaranth. Stir in flour and then add in sliced bananas. Mould into small dough ball shapes.
- Heat oil in a pan, add half of the dough, add half the banana slices and fry for about 3 minutes, add in fresh berries.
- With the remaining mixture, carry out the same process. Mix in powdered sugar and the vanilla paste. Serve with remaining berries.
