Preparation
Ingredients:
400g chicken thigh fillets, diced
2 tsp soy sauce
1 tsp cornflour
1 tbsp sunflower oil
2 garlic, thinly sliced
1 carrot, thinly sliced
350g frozen broccoli
100ml sweet chilli sauce
To serve:
250g rice, cooked
Thinly sliced spring onions
Instructions:
Marinade the chicken in the soy sauce and cornflour and set aside for at least 5 minutes before
cooking.
Heat a frying pan over medium heat and add the oil. Once the pan is very hot, fry the chicken
until golden and remove from the pan.
Turn the heat up to high and stir fry the garlic, carrot and frozen broccoli with a splash of water
for 4 minutes. Add in the sweet chilli sauce and chicken and allow to simmer for 5 minutes.
Serve the sweet chilli chicken with steamed rice and spring onions.
