Method
1 Preheat the oven to 180˚C/160˚C fan/gas mark 4.
2 Working between two 12-cup muffin tins, line 16 cups with papers and spray the insides of the papers with cooking spray.
3 In a large bowl, combine the flour, bicarbonate of soda and salt.
4 In a separate bowl, cream together the butter and sugar.
5 Add the eggs, mashed bananas and vanilla and stir to combine well.
6 Add the banana mixture to the flour mixture and stir until well combined.
7 Pour the batter into the muffin tin cups, filling them almost to the top.
8 Bake for 20 minutes or until a toothpick inserted into the centre of a muffin comes out clean, rotating the tins halfway.
