Method
Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 4 turkey breast steaks
- 2 tbsp Cajun seasoning
- 400g can chickpeas, drained and rinsed
- 2 tbsp tomato puree
- 90g baby spinach
- Small bunch of parsley, finely chopped
- lemon wedges, to serve
Directions:
- Heat 1 tbsp of oil in a frying pan over a medium-high heat and fry the onions and peppers for 7 mins until slightly charred and softened. Remove from the pan and set aside.
- To the same pan over a medium heat, add the chickpeas to the pan along with the tomato paste, 1 tbsp of Cajun seasoning and a few tablespoons of water. Warm through and then roughly mash with a fork. Wilt the spinach in the same pan with 1 tbsp of water.
- Meanwhile, mix the remaining oil and 1 tbsp of the Cajun seasoning and rub over the turkey. Season to taste.
- Heat another frying pan over a medium high heat and fry the turkey for 3-4 minutes on each side until cooked through.
- Gently fold the pepper and onion mixture and parsley through the chickpeas. Serve with the sliced turkey and the lemon wedges for squeezing over.
